Mizeria (Polish Cucumber Salad)

Mizeria is a popular (iconic) Polish salad typically served in the summer. It is essentially cucumbers, sour cream, an acid such as vinegar or lemon juice, and dill. My mom has always included onion (and so do I), but you can skip this ingredient and/or add more green onions or chives. It is refreshing, creamy, tangy, and the perfect side dish. When there are cucumbers in the garden, there will forever be Mizeria.

Yield: 6 servings

Ingredients

  • 2 pounds cucumbers, peeled and sliced (5 medium)
  • 1/2 small yellow onion, diced
  • 2 tablespoons sliced green onions or chives, plus more
  • 2/3 cup cultured sour cream
  • 2 tablespoons white vinegar (I use a Polish brand that has 10% acidity), plus more to taste
  • Kosher salt and freshly ground black pepper
  • Dill for garnish (optional)

Preparation

Add cucumbers and onion into a large bowl and season with salt. Let sit for 5-10 minutes and drain any excess water. Add onion, green onions, sour cream, and vinegar. Mix to combine. Season with ground black pepper, add more salt if needed, and garnish with more green onions and dill.
