Delicata squash is naturally sweet and roasting it brings out the delicious natural flavors. I love this variety of winter squash because the skin is soft and edible. Garam masala is a warming blend of spices that works like a charm here.

Ingredients:
- 2 medium delicata squash (2 pounds), halved lengthwise, seeded, sliced into 1/2-in thick half-circles
- 1 tablespoon olive oil
- 1/2 teaspoon garam masala
- 1/8 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
Preparation:
Preheat oven to 425F.
In a large rimmed baking sheet, add delicata squash, drizzle with olive oil and season with garam masala, cinnamon, salt and pepper. Toss to coast. Spread delicata squash in an even layer. Roast for 30 minutes, carefully flipping halfway through.
